Vinification
The hand-harvested Grenache grapes were delivered to the winery in small containers and destemmed into two separate fermenters. After a short period of soaking, some of the lightly pigmented juice was drawn off and fermented separately (Check out our Obsession, a rosé of Grenache). Cultivated yeasts were used to create bright fruit and spicy flavors. After alcoholic fermentation, the wine went through malolactic conversion in French oak barrels. The wine was aged for ten months before being racked, filtered and bottled.
Tasting Notes
This wine has a royal red robe. The aromas are clean and elevated. Hints of raspberry, strawberry, cherry and spice rise from the glass. The palate is dry, rich and flavorful.
Notes of bramble fruit and spice give way to a rich and complex mouthfeel with a long, soft finish. This elegant and floral red wine pairs well with roasts, turkey, lamb, pork, chicken, barbecue, grilled dishes, spicy foods, and cheese.
